What is bock beer?
Bock beer, also spelled bokbier, is a beer style with roots in the German brewing tradition. Malt usually plays the leading role, with bread-like flavors, a full body, and sometimes notes of caramel. Traditional German bock beers are bottom-fermented, whereas in the Netherlands, you will also encounter top-fermented interpretations.
Bock is not always dark. Within this beer family, you will find both light and dark variants, with differences in strength, sweetness, and bitterness.
What does bock beer taste like?
That depends on the variant. Dark bock beers can offer flavors of bread crust, toast, caramel, and sometimes dried fruit. Lighter variants often place more emphasis on soft grain and bread-like malt notes, with a fresh bitterness.
Hops usually support the malt character. However, a bock does not have to be distinctly sweet: some beers are round and soft, while others have a drier finish.
What is the difference between autumn bock and spring bock?
Autumn bock is strongly associated with the autumn season in the Netherlands. These beers are generally darker and often have a round, malty character with caramel-like flavors. The interpretation varies by brewer, ranging from soft and accessible to robust and pronounced.
Spring bock is usually lighter in color and can be somewhat fresher and more distinctly hopped. Here, too, malt remains important, but the balance is often different from that of an autumn bock.
The names provide a guideline but do not tell the whole story. Therefore, also check the flavor description and the alcohol percentage.
What other types of bock are there?
In addition to autumn bock and spring bock, you will encounter styles such as Doppelbock. This is generally a more powerful, fuller variant with a pronounced malt character. Doppelbock can be either light or dark.
Weizenbock combines the strength of a bock with wheat and the fruity, spicy yeast character of a weizen. As a result, you may encounter notes of banana and clove alongside rich malt flavors.
Eisbock is concentrated by freezing a portion of the water and removing the ice that forms. This typically results in an intense beer with a high alcohol percentage.
