Suppôt de Sapin
NZ Vienna Lager with Fir. Despite all the mess that comes with brewing, the desire to use fir branches again had been nagging at us since February 2022, when we created Captain Kirk Douglas, a Douglas fir Cold IPA that we really enjoyed. Gaël's uncle was once again reluctantly enlisted to gather resin for us from the forests around La-Petite-Pierre in the Northern Vosges Mountains. To mix things up, this time we used spruce and pine branches. And while we were at it, we also changed the beer style, opting for a Vienna Lager. 96% Vienna malt for cereal and very subtle caramel notes, a lager yeast for a super clean profile, the famous New Zealand Nelson Sauvin hops (without dry hopping) to create a beautiful pairing with the pine resin, and voilà, we have a devilishly drinkable brew. In short, our beautiful fir trees, kings of the forest, have been stripped of their charms to offer us this sweet brew!
