8th Birthday - Fruit of the Forest Smoothie Sour (Rivington collab)
To say we’re huge fans of the work Rivington have been doing over their existence would be an understatement and then some. A fandom that pre-dates Polly’s - our head of sales Arron championed their work when he was helping to bring some of the first craft beer into our hometown of Mold - our friends from just north of Manchester were the first brewery we considered for this year’s birthday beers when we shared a festival space in a very snowy Helsinki in 2025. Intrigued by a discussion on the pastry/smoothie sour style, and how Rivington had approached the style, we knew this was an area in which we had never really ventured as a brewery - with our policy in place of never trying anything unless we were working with a brewery experienced in the style, we wanted to plug into their knowledge and expertise after knowing we can make our own sours so much better with the right guidance. Taking inspiration from a fruits of the forest gateau, we’ve loaded this sour with no less than three quarters of a tonne of fruit, fresh hand-scraped Madagascan vanilla, and cacao nibs. We’re absolutely over the moon with the resulting beer - a thick, pulpy, fruit-forward smoothie sour, with just the right level of acidity balanced out with a decadent sweetness, best encapsulated in the burst of sunshine artwork produced by friend of the brewery, Sandbach-based print artist Cheryl Maslen.
