Discovering wild ales, saison, and fruit beer
This collection brings together various beer styles where yeast, fermentation, and fruit can create unique flavors. From a dry saison to a layered wild ale or a bold fruit beer: there is much to discover here beyond the familiar malt and hop flavors.
These beers do not all have the same character. Some are light and fresh, others full and fruity. Acidity, spiciness, and sweetness also vary greatly from beer to beer.
What are wild ales?
Wild alesare beers where wild yeasts and sometimes bacteria contribute to the fermentation and flavor profile. This can produce aromas that are fruity, earthy, or somewhat ‘funky’. By the latter, beer enthusiasts mean notes that are reminiscent of hay, leather, or a barnyard, for example.
A wild ale is not automatically sour. Depending on the microorganisms used and the brewer's method, the beer can be dry, fruity, tart, or distinctly sour. Maturation on wood can add extra depth.
What is saison?
Saisonis a beer style with roots in the Belgian farmhouse tradition. These beers often have a dry finish, lively carbonation, and a fruity, spicy yeast character. Think of citrus and peppery accents.
One saison is light and subtle, another is fuller or more pronounced. Some brewers use other grains, herbs, or additional fermentation techniques to create their own interpretation.
What are fruit beers?
With fruit beers, fruit adds aroma, flavor, and sometimes color. The base beer and the way the fruit is used determine how the result tastes. A fruit beer, therefore, does not have to be sweet.
Fruited sours combine fruit with a sour base. Some are fresh and dry, others fuller and softer. Smoothie sours often emphasize a lot of fruit and a thick, smoothie-like mouthfeel. Thus, a fruit beer can range from refined and tart to distinctly juicy and dessert-like.
